Drain the Herrings. Mix in the Creme Fraiche and Fromage Frais. Add egg, mustard, vinegar, sugar, green herbs and salt and pepper. Half the mixture into two bowls and add the Herrings to one of them.
SLice the crust off the bread and lay two slices on a serving plate. Spread some of the Sill mixture onto the bread, and then lay on top another two slices of bread.
Then layer by layer, mixture and bread slices. Then at the end, pour to mixture without matjes sill on top and around the edges. Wrap in Cling film and leave in a cool place for a while.
When ready to serve, garnish with Sill, egg, red onion, and dill.
