Ingredients
- 1 can red kidney beans rinsed
- 1tbsp Olive oil
- 1 Medium Red onion Chopped
- 2 cloves Crushed garlic
- 1 Chopped green pepper
- 1 red pepper
- 1 chopped corgette (optional)
- 1-Β½ tsp Chili powder
- ΒΎ tsp cinnamon
- ΒΎ tsp ground coriander
- ΒΎ teaspoon ground cumin
- 10 ounces chopped spinach
- 1 package (10 onces) frozen corn kernels
- 2 cups brown rice
- 2 cans (8 ounces each) no-salt-added tomato sauce

Quite spicy. A very adventurous dish!

Heat oil over medium-low heat. Add onion and garlic and cook until onion is
tender. Add peppers and courgette.
Stir in chili powder, cinnamon, coriander, and cumin until coated. Add tomato
sauce and 1 cup of water and bring to a boil. Reduce to a simmer, cover, and cook
20 minutes.
Stir in spinach and beans. Return to the boil, reduce and simmer for 20 minutes.
Add corn and cook for 5 minutes to heat through. Serve with brown rice.
Had a good kick to it. I needed to add some corn flour as it was a bit watery and I also left out the cinnamon. My meat eating partner went back for seconds so it can't have been bad!
