- 2 red onions
- 3 garlic cloves. crushed
- 15g Fresh sage. shredded
- 2 large Potatoes. cubed
- 1.4l stock
- 250g Fresh spinach
- 4tbsp Creme Fraiche (optional)

I could live forever on just this soup - it's gorgeously silky and tastes wonderful, as well as being a really vibrant green.

Saute onion, add garlic, potatoes and sage. Cover and cook on a low heat for 10 mins.
Stir in stock, simmer for 5 mins. Add spinach, cook for 2 mins.
Blenderise until smooth, serve with a spoonful of creme fraiche and a spare sage leaf. Or not.
Chef's Tips
If you want to keep the vibrant green look, peel the potatoes and only use white onions. I don't bother, but it does look so much more striking!
I also leave out the creme fraiche - it's silky and creamy enough for me without it, but some prefer to add it in.
Make a huge batch and freeze it in portions - makes a great lunch in a flask.
