Cooked Nectarines

Nectarines simmered in Fruit Juice

Method

Put orange juice in a pot together with cinnamon stick,grated lemon peel and sugar and bring to the boil.

Add the 8 washed nectarines (no need to peel),return to the boil and simmer until a fork goes in easily to the nectarine.

Remove nectarines from juice and put them in a dish on the side of the stove.

Pour orange liquor or brandy over the nectarines.

Then boil the juice vigorously until it has reduced to half the quantity.

Pour over nectarines and allow to cool.

Nectarines 8
Sugar 1 Tblsp
Lemon Peel 2 Tblsp
Cinnamon Stick 1
Orange Juice 1 carton
Orange Liquor 6 - 8 Tblsp

Hints 'n' Tips

The nectarines can be deep frozen and then used when out of season and not freely available.
