- 2 sprigs fresh mint

1. Melt oil and butter in a saucepan with a tightfitting lid.
2. Add the potatoes,mint and salt,cover with lid and cook over a low heat,shaking the pan occasionally,for 20-25 minutes.
3. Serve hot with more fresh mint.
