3 nectarines quartered and stoned
3 plums quartered and stoned
4 tbsp dark rum
2 tbsp lemon juice
25g unsalted butter
150g fudge coarsely chopped or sliced
Shortbread and creme fraiche to serve

Preheat the oven to 250C/230C fan/500F/gas 10 or to its highest setting. Arrange the fruit in a 30cm oval gratin dish or other ovenproof dish of similar size. Drizzle the rum and lemon juice over the fruit.

Dot with the butter and scatter over the fudge. Roast for 15 minutes until the fruit is golden at the tips with snippets of molten fudge on top, and sitting in lots of sweet buttery juices. Serve hot with shortbread and crème fraîche.
