Description

I made this over the weekend for a BBQ. I wanted to make my own burgers but found plain seasoned mince for them were a bit bland. These however went down well!

    De-seed the pepper.

    Over an open flame, blacken the skin of the red peppers and peel.

    Dice the peppers, onion, garlic and fry lightly until softened.

    Allow the onion and pepper mix to cool and add to the minced beef, season and add the Sun dried tomato paste and kneed together.

    Add the egg and mix through.

    Separate the mixture into six equal portions and shape into patties.

    Grill or BBQ until browned and cooked through.
