Method

    1. Whisk the eggs in a LARGE bowl,add the oil whisk again.

    2. Sift the dry ingredients together in a smaller bowl add to egg&
    oil mix,add the vanilla add the apple juice, stir in the grated carrots,fruit and nuts.

    3. Pour the mix into 2 9" lined
    cake tins bake in a pre-heated oven gas mark 3 for 45/50
    mins or until a skewer comes out clean.

    4. Cool in the tin for
    about 10 mins take out of tins put onto cooling trays to get
    cold.

    5. Leave overnight, can be frosted with,1, 200g tub of
    light philadelphia cream cheese mixed with zest of 1 orange,
    or left plain. Can be frozen for a month.Enjoy

This looks delicious - being a diabetic myself I am always on the look out for interesting recipes I can cook. I will definately be trying this one.
