This diabetic-friendly fruit crumble is a delightful way to enjoy the comforting flavors of baked fruit without the sugar. With a buttery, crumbly topping that comes together in a snap, you can customize it with your favorite fruitsβ€”be it tart rhubarb, juicy plums, or a medley of frozen berries. The warm, spiced apples create a luscious base that pairs perfectly with the crisp topping, making it a guilt-free treat that everyone will love.

Method

    Add flour and margarine to food processor and process for a few seconds till it resembles fine crumbs.

    Add sweetener (Canderel or splendour) to taste, wizz and pour over prepared fruit.

    Peel, core and slice 4 large cooking apples.

    Mix apples together with sweetener and cinnamon.

    Place apple mixture in dish and pour a tablespoon of hot water over the top.

    You can use any fruit you like, rhubarb, plums or frozen mixed fruit.

    Bake in oven on a moderate heat for 45 minutes.

I blitz my marg and flour first and then put a good layer of canderel on the top and I find that that is enough. If your concerned about it being too sweet dont use too much on your fruit. Hope you enjoy it, its lovely.

This looks good! I'm cooking for a diabetic friend this weekend and I'm gonna try this! I don't use sweetener very ofter, how much would you add to the topping/filling. Thanks!
