- 175g Couscous
- 450ml Vegetable Stock
- 2 Tomatoes, diced

This meal can be served hot or cold as a delicious packed lunch for the office or for school.

1. Put the couscous into a bowl, pour over the hot stock and leave to soak for about 15 minutes until all the liquid is absorbed
2. Chop the Turkey Rashers, place in a frying pan with a splash of oil and fry for 3 minutes
3. Add to the couscous, mix well and allow to cool
4. Stir the tomatoes into the salad, season if needed
