- 3 red pepper
- 1 large onion
- 450g fresh linguine
- 2 tsp Balsamic Vinegar
- 100g creamy gorgonzola
- handful of basil leaves

1) Heat the oil in a non stick pan and add the peppers and onions. Cook over a gentle heat for 30 minutes. Add the basil and cook for 1 minute.
2) Boil the pasta in a large pan for 2-3 minutes. Drain well and toss with peppers, vinegar and gorgonzola.
