Ingredients
- Β½ cup (115 mL/4fl oz) Olive Oil
- 55mL (2 fl oz) Fresh lemon juice
- 1 Large clove garlic, minced
- 1 Teaspoon Celery seed
- Salt and pepper to taste
- ΒΌ Teaspoon Turmeric
- ΒΌ Teaspoon Cumin
- 400 mL (14fl oz) Boiling vegetable stock
- 500g (1lb) King prawns, shelled, tail-on
- 200g (7 oz) Small calamari rings
- 300g (10Β½ oz) Couscous
- 3 Tomatoes, finely diced
- 2 Stalks celery, finely sliced
- 6 Spring onions, chopped
- 20 Fresh mint leaves, finely chopped

Method

1) Whisk together olive oil, lemon juice, garlic and celery seed until thick then season with salt and pepper. Set aside.
2) Add turmeric and cumin to the simmering stock and stir. Add the prawns and calamari and poach gently for 2 minutes or until the prawns are pink then remove from the stock.
3) Place the couscous in a large bowl then pour the remaining spiced stock over. Stir well and cover then allow to stand until water is absorbed, about 10 minutes.
4) Fluff up with a fork and add prawn and calamari mixture, diced tomatoes, celery, spring onions and mint. Add dressing and mix well.
