- ΒΌ pint Water
- pinch Salt
- Lamb Filling
- 1lb Diced Lamb
- handful Mint Leaves
- 2 Chopped Onions
- few tablespoons Onion Bisto

Pastry
1.Mix all dry ingredients
2.Add water and mix to form a dough
3.Roll out on floured surface
Meat
1.Remove any gristle and excess fat, dice, coat in flour and shake off the excess
2.Add oil to the pan, heat this and add lamb, allow to colour
3.Add onions and sweat together
4.Add stock or water to cover
5.Season
6.Bring to the boil and simmer for 45 minutes
7.Tear mint leaves and add
8.Thicken slightly by adding bisto or cornflower
9.Roll out 2/3 of the pastry and line pudding basin
10.Fill with lamb and gravy, keeping some gravy to the side
11.Wet around top of paste using gravy
12.Roll out remaining paste and cover the pudding
13.Seal well
14.Cover the buttered greaseproof and foil
15.Steam for 45 minutes
16.Turn out onto plate
17.Serve with extra gravy
