Ingredients
- 1 onion
- 1 teaspoon olive oil
- 45g Parma ham
- 150g linguine
- 2 eggs
- 20g parmesan
- 1 tablespoon chopped chives
- handful Flat Leaf Parsley
- 5-6 drops Tabasco sauce

1. Finely chop the onion and and place in frying pan with 150ml water and bring to the boil. Lower the heat to medium, cover and cook for 5 mins.
2. Remove lid and turn up heat, cook for 2-3 mins until water evaporated.
3. Add olive oil and parma ham, cook for 3-4 mins until browned, stir freq.
4. Remove from heat and keep warm.
5. Meanwhile cook the linguine.
6. In a large bowl mix egg yolks, parmesan, herbs and tabasco.
7. Drain the pasta when cooked, reserve 3-4 tablespoons of the cooking water.
8. Mix tog the pasta, egg yolks and parmesan mixture with the reserved cooking liquid, the onion and parma ham. Season with salt and pepper. Serve with green salad
