Ingredients
- 2 teaspoons mixed spice
- grated nutmeg
- 6oz mixed dried fruit
- 2oz candied peel. chopped
- 3 tablespoons brandy
- 10 fluid oz milk
- 2oz butter. melted
- 3oz dark soft sugar
- 1 beaten egg. large
- optional grated zest of orange and lemon
- 1 tablespoon demerara sugar

Pour brandy over dried fruits and peel and leave for a while to soak in.
In large bowl, break bread into pieces, pour milk over,stir then leave for 1/2 hour to soak.
Next add melted butter, sugar, mixed spice and beaten egg to bread mixture,beat until no lump remain. Stir in soaked fruit and brandy if any remaining,and lemon and orange zest.
Pour into greased 7" square tin,sprinkle dem. on top also grated nutmeg.
Bake for one and a quarter hours in oven [ preheated at 180 degrees centigrade.
Chef's Tips
Recipe says brandy, but one could try another spirit, whisky maybe. I dont always have orange or lemon zest I just add more peel.
I usually put the fruit and brandy into microwave for a short while, brandy soaks in better when warm .
