- 2 cloves garlic, finely chopped
- 1 onion, finely chopped
- 2 medium potatoes
- 2 courgettes
- 2 large celery stalks
- 1 teaspoon dried mixed herbs
- 2 pints boiling water
- 2 vegetable stock cubes
- to season salt and pepper

I discovered this soup during my diet, it's not too damaging to the waistline but is very filling.

1. Melt butter in a pan, and add garlic and onions.
2. Once garlic has begun to brown and onion has softened, add roughly chopped potatoes, courgettes and celery to the pan.
3. Dissolve vegetable stock cubes into boiling water, and add to the pan, along with mixed herbs and salt and pepper. Cover and leave for 20 minutes on a low heat.
4. Blend contents of the pan and serve well seasoned.
