Lamb Kleftiko [ Arnaki Kleftiko]
Ingredients
- 600 grm Lamb cubed
- 2 small onions. peeled and roughly chopped
- 3 garlic cloves. finely chopped
- 2 medium Tomatoes. sliced
- 1 tspn dried oregano
- 3 bayleaves
- juice of 1 lemon
- 100 grm feta cheese
- salt and freshly ground black pepper
- 2 tbspn olive oil to saute
- 4 medium baking potatoes, peeled and cut into wedges
- 3 baby courgettes sliced into rings

Another classic Greek favourite.This is a version I came
across in Crete,it uses diced shoulder of lamb.
Method

1. Pre-heat oven to 150 deg.c.
2. Heat olive oil in a large frying pan, season lamb with salt and pepper and brown on all sides over high heat.
3. Reduce heat to medium, add onions and garlic and cook until soft.
4. Put potatoes into a large lidded casserole dish, pour over lemon juice, season with salt and pepper and add bay leaves & courgette slices.
5. Transfer meat and onion mixture to casserole (including juices).
6. Top with sliced tomato, sprinkle with dried oregano and crumble over feta cheese.
7. Cover with lid and place in centre of oven.
8. Cook for 3 hours, checking occasionally. If the Kleftiko appears dry, add a splash of water or stock.
Remove from the oven and serve.
