Method

    1. Grease a 1 1/2 pint and 1/2 pint pudding basin.
    2. Place margarine,caster sugar,eggs,sifted flour and baking powder into a mixing bowl.
    3. Mix together with a wooden spoon,then beat for 2 minutes.
    4. Place just over two-thirds of the mixture in the larger pudding basin and the remaining mixture in the smaller basin.Level the surface.Bake at 325F/,160C/Gas Mark 3 for about 50 minutes fot the smaller one and 1 hour for the larger one,or until is golden.Turn out and cool on a wire rack.
    For the icing:
    5. Beat together butter and icing sugar.
    6. Spread butter cream over the larger cake and roll in coconut.Place flat side down on a cake board.
    7. To make the head, cut a small slice off either side of the smaller cake.Spread with butter cream,roll in coconut and place on top of the body with the flat side at the back of the snowman.Using a little butter cream,stick the wagon wheel and marshmallow teacake on the top for a hat.
    Use a marzipan to make a scarf and the raisins and sweets for the face and buttons,stick onto the snowman with a little butter cream.
    Roll any remaining butter cream into snowballs,roll in coconut and pile next to the snowman.

I made your recipe for a Christmas fayre I was doing with my pampered chef kitchenware. I did a competition called "Name the Snowman" It went down very well- Mr.Ice was the name that won and it brought a smile to the family that won the cake.
