- 8 oz stoned dates.chopped
- 2 tbsp lemon juice
- 4 oz dark brown sugar
- 4 tbsp water
- 4 oz Flora white fat
- 4 oz plain flour
- 4 oz self raising flour
- 3 oz caster sugar
- 1 egg beaten

1. Make the topping:
Place all the topping ingredients together in a saucepan.Gently simmer for 10 minutes,until the mixture is thick,pulpy and sticky.
If the mixture gets too dry,add another tablespoon of water.Leave aside to cool.
Set the oven to moderate hot,Gas Mark 4/350F/180C.
2. Make the pastry:
Rub the fat into the plain ans self-raising flour,add the sugar and egg and mix to form a soft dough.Press 2/3 of the dough into the tin using your fingers,then spread the cooled date mixture evenly over this.
Roll the remaining dough into long thin sausages,again,using your fingers.Place the sausage shapes on top of the date mixture in a criss cross lattice pattern.
3. Bake for 35-40 minutes in the centre of the oven.Leave to cool in the tin.
When cold,cut into 12 squares.
