Ingredients
- 250g/9oz Self-Raising Flour
- 1tsp baking powder
- 50g/2oz Soft margarine or butter
- 75g/3oz caster sugar
- 175g/6oz fresh blueberries
- 1 grated rind of lemon
- 2 eggs
- 250ml/ 8fl oz milk

1, Preheat oven to 200C/gas mark 6.
2, Mix flour and baking powder in a bowl. Rub in margarine, stir in sugar, blueberries and lemon rind.
3, Mix together eggs and milk and add this to the dry ingredients, mixing quickly to blend.
4, put into muffin cases and bake for 20-25 minutes.
