- 8 wheat flour tortillas
- 1 onion, sliced
- 4 chicken breasts, skinless boneless, sliced
- 1 packet taco seasoning mix
- 4 tomatoes chopped
- 4 red pepper, sliced
- 1 tub tomato salsa
- 1 tub soured cream

Description
Classic Mexican dish, simple and easy to do and great for a midweek dinner or snack.

1. Wrap the tortillas in aluminium foil and cook in the oven for 10 minutes, or until soft.
2. Meanwhile fry the red pepper and sliced onion until they are soft and well cooked.
3. Add the chicken and cook it until tender making sure to stir regularly to ensure all the chicken gets cooked evenly. Now stir in taco seasoning.
4. Preheat the oven to 180C. Place the chicken mixture in the centre of each tortilla and add tomatoes. Fold the tortillas into a parcel and put in an oven-proof dish.
5. Cover the dish and cook in the oven for 20 minutes.
6. Spoon the tomato salsa and sored cream over the hot tortillas and sprinkle with grated cheese, before serving.
Chef's Tips
This dish is great served with chips. I prefer to serve it with a green salad as this is a much healthier option.
