Traditional Italian Carabonara

1.Put a medium or large pan 3/4 full of water on the heat add a good pinch of salt..
2.Cut the bacon into slivers across the width and fry them off with a little butter or olive oil until they are a little crispy..
3.Then add the cream to the bacon and bring to a simmer.
4.Add the spaghetti to the boiling water stir well to separate.
5.Add the Parmesan to the simmering pan then reduce the heat.
6.Drain the pasta and place back in the pan.
7.Add the egg yolks to the cream stir in.
8.Add the sauce to the spaghetti,a few good twists of black pepper and enjoy proper food cooked not prossesed remember.xx
Thanks solo1, I added more cream as you suggested and it worked a treat, you can really control the consistancy easily this way, thansk so much for your help. Never to have dry Carbonara again, YES!

Hello, you can add some more cream to the pan..heat it through..traditionally it is a sticky dish though..
This is my favourite Italian dish - your recipe makes it look so easy. Mine alwayd turns out far too dry, can you sugest anything I can do about this? Perhaps I am cooking it to long?
