Ingredients
- 1 apple. peeled and chopped
- 2 tsp lemon juice
- 100g/4oz light demerara sugar
- 200g/7oz plain flour
- 85g/3oz wholemeal flour
- 4 tsp baking powder
- 1 tbsp Ground Mixed Spice
- 50g/2oz pecan nuts. chopped (optional)
- 250ml/8fl oz milk
- 4 tbsp sunflower oil
- 1 egg. beaten

Heat oven to 200C/fan 180C/gas 6. Line a 12-hole muffin tin with paper cases and set aside. Put the apple in a bowl, then toss with the lemon juice. Add 2 tbsp of the sugar and set aside for 5 minutes.
Meanwhile, sift the plain and the wholemeal flours, baking powder, mixed spice and 1/2 tsp salt into a large bowl. Stir in the remaining sugar and pecans (if using), then make a well in the centre of the dry ingredients.
Beat together the milk, oil and eff, then add the apple. Tup the wet ingredients into the centre of the dry ingredients and mix together lightly to make a lumpy batter.
Spoon the mixture into the paper cases, filling each case three-quarters full. Bake the muffins for 20-25 minutes, or until the tops are peaked and brown. Remove from the oven and leave to cool on a wire rack.
Chef's Tips
Be sure to only mix muffins just a little. Enough so that there si no dry ingredients, but if stirred too much they will be tough.
