Lovely sweet spiced cake with contrasting flaked almonds makes this cake delicious.

    Pre heat oven 160c/325F/Gas 3. Butter a deep roasting dish [12x9 inches] and line with strip of greased proof paper to overlap sides.
    In a bowl add flour, bicarb, salt & spices, make a well in centre.
    Warm butter, sugar and honey in a saucepan over a low heat until runny not hot.
    Crack eggs into a jug, and make up with milk to 1/2 pint. Mix with a fork to mix.
    Pour melted ingredients into flour mixture, add eggs/milk mix. With a wooden spoon stir to blend then beat to a smooth batter. Pour into tin, sprinkle with the flaked almonds.
    Bake for 50-1hour until cooked [if taking longer put foil over top to prevent burning]. Once cooled store in a tin. Tastes even better after a day or so. Cuts into 24 pieces or less if you're feeling greedy.
