Method

    1. Preheat the oven to 190ร‚ยฐC, 375ร‚ยฐF, gas mark 5.

    2. Saute the onion, garlic and celery on the oil and butter in a large saucepan.

    3. Toss the apple in the lemon juice and rind until well coated than drain it.

    4. Put the apple into the saucepan, then add the chestnuts, orange pieces, breadcrumbs, sausagemeat, seasoning and sage. Mix thoroughly. Leave to cool.

    5. Stuff the chicken with the mixture by it's neck.

    5. Place the chicken in a roasting tin and cover with lightly greased foil and roast for at least for 1 1-30 hours.

    6. Remove the foil and roast further until the chicken gets crispy. Leave to stand for 10 minutes before carving.
