We all love that magic moment when you break into a brulée, and with creamy Alpro Chocolate shake and fresh raspberries this recipe will never disappoint!

Method

    Blend the custard powder with 2-3 tablespoons of the Alpro Chocolate shake until you have a smooth paste. Gently heat the remaining shake and sugar until it reaches simmering point.

    Pour the warmed shake onto the blended custard powder and stir well to mix. Return to the heat, add the Amaretto, if being used, and stir constantly until the custard thickens then leave to cool slightly

    Arrange a few raspberries in the bottom of 4 shallow ramekin dishes. Pour the custard over the raspberries, smooth the surface and chill for at least 15 minutes.

    Ensure your grill is really hot. Sprinkle the caster sugar evenly over the custard and place under the grill until the sugar is just caramelised and forms a smooth, golden crust. Allow to cool ever so slightly, serve and enjoy!

Chef's Tips

You can make these in advance (up to stage 3) and keep in the fridge until just before serving, adding the sugar and finishing off under the grill at the last minute. And a few drops of almond essence instead of the Amaretto will add a little fragrant nuttiness to the custard without the alcohol.
