- 500g unpeeled cooked prawns
- 1โ3 large cloves of garlic
- 2 cm piece of fresh ginger
- ยฝโ1 whole green chilli
- 30g preserved lemon
- 3โ4 tbsp olive oil
- salt to taste
- 1 tsp paprika
- 1 tsp cumin powder
- a large pinch of cayenne pepper
- fresh coriander

Shell the prawns. Crush the garlic. Grate the ginger. Chop the green chilli, if included, likewise the preserved lemon.
In a heavy-bottomed frying or sautรฉ pan, heat the olive oil over a modest flame and let the garlic just take colour before adding the ginger and all the other seasonings except for the lemon and the coriander or parsley. Blend everything together for 1โ2 min before tipping in the prawns and the lemon and stir-frying a further 2โ3 min. Snip coriander over the prawns and serve.

Rice is a natural accompaniment.
