Ingredients
- 225 g plain flour
- 1 Β½ tsp Ground turmeric
- pinch salt
- 115g butter - cold and cut into cubes
- Β½ beaten egg
- 1 yellow pepper,diced
- 150g carrots, diced
- 300g butternut squash flesh, diced
- 4 tbsp Fresh coriander. chopped
- 4 spring onions finely chopped
- 200g sweetcorn
- 100g Double gloucester cheese (grated)
- 2 tsp salt
- 1 tsp Dried chilli flakes
- pinch Allspice powder
- 8 -10 strands Fresh Thyme chopped

A great picnic lunch or snack. As good hot or cold with a dash of hot pepper sauce.

1. To make the pastry, Place flour, tumeric & salt into a bowl in rub in the butter until resembles breadcrumbs.
Add 4 - 5 tbsp water - until the misture has formed a dough. Lighty knead and roll into a ball. Chill for 30 mins in the fridge.
2. Preheat the oven to 200 c/ gas 6.
3. Put the pepper, carrots ans squash (also the sweetcorn if using fresh rather than canned) into the saucepan with a small amount of just boiled water. Cover and cook for 4 mins. Drain and then mix in a large bowl with all the other ingrediants. (except the beaten egg)Set filling mix aside to cool.
4. Roll out the pastry into 8 circles, about 1/2 cm thick.
Spoon in the filling mix on one half of the circle, leaving a edge of pastry of about 1 cm . Brush beaten egg around the entire edge of the pastry circle and fold it over to form a semi circle shape , pressing the edge together with a fork. Brush with beaten egg and place on a greased baking tray. Repeat until all mix/pastry used.
5. Place in oven and bake for 25 mins until golden brown.
