- 1 tbs tomato puree
- 1 sliced onion
- 1-2 large courgettes
- 2-3 ripe tomatoes
- 2-3 srpays fry light for Spraying
- to taste salt and pepper
- 1 tsp dried thyme

heat in a sauce pan tomatoes, tomato puree, thyme and heat through gently.
In a pan spray some fry light and heat through onions mushrooms and garlic
Mix together mushroom and onion mix with the tomatoes and pour into a roasting dish and season with salt and pepper
Slice the courgette and the tomatoes and lay over the top alternating tomato and courgette so they are half laying on each other.
Season the top with salt and pepper and spray over with fry light.
Cook on 220 for about 20-30 mins untill blackened round the edges
