- 450g fresh sliced carrots
- 1 sliced onion
- 2 pints veg stock
- 1tsp ground corriander
- to taste fresh chopped corriander
- to taste salt and pepper
- 2-3 sprays fry light for frying

fry carrots and onion with the fry light in a pan for about 4 mins.
Add the ground corriander and cook for a further 1 min.
Add 2 pints of stock and bring to the boil
simmer untill carrots are cooked through
Blend
Return to a clean pan and re heat adding the chopped corriander and salt and pepper

Love this recipe. Just as a tip Weight watchers have a double cream which you can buy in Sainsburys so if you like your soup extra creamy like me stir in a spoonful for one point.
