Ingredients
- 1 Medium Onion finely chopped
- 2 garlic cloves. finely chopped/crushed
- 1 head green lettuce or 2 little gem lettuces. roughly chopped
- 2 tbsp butter
- 2 tbsp water
- 200g frozen peas
- ยฝ tsp salt
- ยฝ tbsp fresh lemon juice
- 2 tsp chopped fresh herbs (any will do but a mix of thyme. mint and parsley work well)

Description
This recipe is perfect for using up slightly old lettuce and for anyone who doesn't like lettuce raw. If you think cooked lettuce sounds odd, try it! You will be surprised!

Melt the butter in a large pan over medium heat. Add the onion and garlic and cook, stirring occasionally, for 5-7 minutes or until softened. Add the lettuce and water and simmer, covered, unitl the lettuce wilts - about 5 mins. Stir in the peas and cook until they are heated through - about 4 mins. Coarsley puree the mix in a blender or with a hand held blender in the pan (hold a lid over if using a hand held blender as it will splash). Heat through again and stir in lemon juice, salt and herbs to taste.
Very nice with any kind of white fish. I like fried sea bass fillets.
Can be frozen in portions.
