Ingredients
- 3 beef tomatoes
- 3 - 4 cloves garlic
- 1 White Onion
- 1 red pepper
- 1 chicken stock cube
- pinch salt and pepper
- 1 bunch basil leaves
- small pot Creme Fraiche

soup is amazing...yummy, healthy, hot (or cold) how could you not like it!?
Method

1. Chop up onion and begin to fry in a pan with a little oil
2. cut garlic cloves in half and add to onion
3. while these are gently frying on a low heat cut up pepper and tomatoes in to large pieces
4. when the onions look nice and golden and smell delicious add the pepper followed by the tomato pieces
5. keep mixing until the tomatoes soften and the mixture becomes juicy
(don't worry if there is alot of liquid as some of it will reduce and after mixing later will become thicker)
6. when the tomatoes have reduced quite a lot chop up the basil roughly and add to the pan, mix it all in together adding salt and pepper
7. add the chicken stock, if it is a crumbly cube, crumble straight in to the pan...if not dissolve it in a small amount of hot water and add
8. leave to simmer on a low heat
9. pour in to a blender (or use a hand blender) and liquidize until smooth
10. add a few tbs of creme fraiche and mix in
eat hot with lovely crusty white bread

add some more creme fraiche for a more creamy taste and texture
