Description

Breakfast doughnuts in 20 minutes! A cross between a sponge cake and a traditional doughnut in texture as no yeast is used. Use a doughnut tin or a muffin tin. No frying required.

Method

    Preheat the oven to 220 degrees C.
    Sift the flour and baking powder into a bowl and stir in the 40 g sugar. Measure the milk into a jug, add a generous squeeze of lemon juice and stir. Melt the 25 g butter in a small saucepan, or in a microwave. With a fork, whisk the egg into the milk, then pour into the bowl, with 15 g melted butter and whisk together, preferably with an electric hand whisk, until you get a smooth, thick batter. Dip a pastry brush in the remaining melted butter and brush the insides of the tin*.
    Spoon or pipe the batter into the prepared tin, filling each 'hole' 1/2 full.
    Bake in the hot oven for 8 -10 minutes until just starting to turn golden, and springy when gently pressed.
    Remove from the oven and leave in the tin for two minutes while you melt the additional butter and put the sugar, and cinnamon if using, in a bowl.
    Remove the doughnuts from the tin, using a knife to help ease them out if needed. Dip each one in melted butter**, then dip in the sugar.
    Eat while still warm, or leave to cool. Best eaten on the day you make them.

Chef's Tips

*You can use a 6 hole standard size doughnut tin, a 12 hole mini doughnut tin, or a standard size muffin tin. The number of doughnuts you get will depend on the size used, but is likely to be 6 standard sized doughnuts, 12 mini ones, or 9 medium ones / muffins.
**Or brush on the melted butter if you prefer.

Buttermilk can be used instead of the milk + lemon juice. Personally, I don't think the buttermilk makes them any better.

For dessert serve warm or cooled with chocolate sauce / warm chocolate ganache for dipping / pouring.
