- 1 cup full fat greek yoghurt
- 2-3 cloves garlic. chopped
- 1tbsp extra virgin olive oil
- a squeeze of lemon juice
- to taste salt and pepper
- 10cm cucumber. skinned. de-seeded and diced
- a pinch of dried mint

My mother taught me this not too long ago. I always make it when there are no dips in the house and I fancy one. Good simple recipe!

Peel and chop the garlic into tiny pieces, as small as you can get them. Skin the cucumber, de-seed it and chop into small pieces.
In a bowl pour the yoghurt, olive oil and squeeze the lemon juice in. Stir slowly until the oil and lemon has blended in with the yoghurt.
Add garlic and cucumber pieces to the yoghurt mixture. Mix it all up.
Add salt and pepper to taste.
Sprinkle dried mint on top, and it's done!
Chef's Tips
This is awesome with warm pitta breads!
Make sure the cucumber is diced quite small (but not mashed!) as you want to be able to scoop them up with your pitta...
