Ingredients
- 1 oz Good quality cocoa powder
- 6 oz Softened Butter
- 6 oz caster sugar
- 6 oz self raising flour
- 3 eggs
- Β½ to 1 teaspoon chilli powder
- Β½ tsp Cinnamon
- ΒΌ tsp ground allspice
- ΒΌ tsp ground ginger
- 1 orange grated rind from 1 orange
- 1 tblsp orange juice (fresh)
- 2 oz Dark Chocolate (70%)
- 1 tablespoon orange juice
- Β½ oz Butter
- 3 oz Sifted Icing Sugar
- ΒΌ tsp chilli powder (or to taste)

Pre-heat the oven to 180. Put deep paper muffin cases into a muffin tray.
Cream the sugar with the butter, and beat in the spices and the orange zest. Weigh out the flour, the baking powder and cocoa powder and set aside. Beat the eggs into the butter mixture one by one, adding a little flour with each egg to prevent the mixture curdling. Fold the flour / cocoa/ baking powder into the batter until it is all combined. If at this stage the mixture is a bit stiff ie doesnt fall off a spoon when its tapped on the side of the bowl, then stir in some orange juice to loosen the mixture. Divide the batter between the cupcake cases (it should make 8 muffin-sized cupcakes) and bake for about 30 mins.
To make the icing: melt the chocolate and butter together with the orange juice in a bowl in a pan of hot water over a low heat. Add the chilli powder and beat in the icing sugar to make a smooth thick icing. Let it cool a little and then carefully spoon onto each cooled cupcake using a knife to spread it evenly. Decorate with shredded orange rind, flakes of plain chocolate or whatever you fancy.
