Ingredients
- 12 oz Self-raising flour
- 1 tsp Cinnamon
- pinch of salt
- 8 ozs Butter
- 4 ozs Sultanas or Raisins
- 6ozs caster sugar
- 3ozs toasted hazelnuts. chopped
- 1 pound cooking apples
- 1 Zest of lemon
- 3 large eggs
- Demerera sugar for the topping

1. Grease or line a 20 cm (8inch) loose bottomed cake tin. Pulse the sifted flour,cinnamon,salt and butter in a food processor until its the consistency of fine breadcrumbs. put this mixture in a bowl and stir in the sultanas or raisins,sugar and toasted nuts.
2. Peel, core and chop the apples roughly and add to other ingredients with the lemon zest. Lightly whisk the eggs and stir into the mixture do not beat.
3 Spoon into the prepared cake tin and bake in a moderate oven at 180c/350f gas mark4. 60 mins- 75 mins or until firm to the touch,if necessary cover lightly with foil to prevent it becoming too brown on the top. Dredge with demerara sugar ,while still hot.
4. cool in the tin on a wire rack
