In a food processor, puree the quark, soft cheese, most of the icing sugar and orange zest. Transfer to a medium sized bowl and fold in the creme fraiche.
In the same processor (no need to clean), puree 200g of sliced strawberries, the caster sugar, orange juice and liquer (if using).
Pour the strawberry puree into a glass bowl (or into 6 wine glasses).
Top the puree with sponge fingers and cover with some more puree. Top with the remaining sliced strawberries then half of the cheese mixture.
Top with any remaining sponge fingers, more puree and cheese mixture.
Cover with Clingfilm and keep in the fridge overnight (or at least a few hours). Garnish with the reserved strawberries just before serving and dust with a little icing sugar.
