Description

This is an easy base recipe to make and then you just add your own creations to the dough, cinnamon, choc chips, raisins etc

Method

    Mix the butter sugar and egg yolk until pale and creamy and add the vanilla essence.

    Then add is 250g of flour into the electric mixer and I add the last 50 g and then knead it in to the dough.

    To get the dough really ready to roll put it in a plastic bag and put in the fridge for half and hour. Now preheat the oven to 160C

    Roll out on a floured surface to about 1/4 inch thick and then use different cookie cutters to cut out your shapes. Alternatively if you roll it into a sausage shape before you put it in the plastic bag, when you bring it out of the fridge you can cut slices off the sausage and place the "rounds" straight onto the baking tray lined with greaseproof paper.

    Cook for 10-12 minutes and then leave to cool on a cool rack letting the biscuits harden. Plain biscuits you can sprinkle with caster sugar at this stage.


Chef's Tips

You can add whatever you want to the biscuit dough.

Today I added cranberries but raisins go just as well!

For chocolate biscuits and 1 tablespoon of cocoa powder to the flour.

I add cinnamon or mixed spice (2 teaspoon to the flour)

Also for lemon or orange biscuits you can add the juice of a lemon or an orange to the butter and sugar mixture - this makes it very sticky so definitely needs to refrigerate otherwise add another tablespoon of flour.
