Ingredients
- 4x120g sea bream fillets
- 25ml olive oil
- 50ml White wine
- 2 Sprigs of rosemary picked and chopped
- 2 tomatoes cored and finely diced
- Β½ red onion. finely chopped
- Β½ Red pepper finely diced
- 10g Fresh Coriander
- 10ml malt vinegar
- 5g dark brown sugar
- 5ml Tabasco sauce
- 60g watercress
- 4 Lemon Wedges
- 50ml olive oil
- ΒΌ tsp french mustard
- pinch of salt
- pinch ground black pepper

1.Preheat oven to 200C/fan 180C/gas mark 6
2.Place fillets on a greased baking sheet. Brush with olive oil and sprinkle with rosemary.
3.Season with salt and pepper, and sprinkle with wine.
4.Cover the sheet with foil and bake for 10 minutes.
5.Combine the tomatoes, onion, red pepper, vinegar, sugar and tabasco. Season to taste.
6.Combine the olive oil, French mustard, salt and pepper to make a dressing.
7.To serve, place the watercress on a plate. Layer a ΒΌ of the salsa and position the sea bream on top. Garnish with a wedge of lemon.
