- 750g plums, cut in quarters and stone removed
- 1 tablespoon Norbu sweetener
- ΒΌ cup Norbu sweetener

- 1 ΒΌ cups skim milk
- 2 teaspoons vanilla extract
- 1 cup plain flour
- ΒΌ teaspoon salt
- 1/3 cup wholemeal spelt flour
- 1/3 cup rolled oats
- Β½ teaspoon cinnamon
- Β½ teaspoon ginger
- ΒΌ teaspoon salt
- ΒΌ teaspoon cardamom
- 2 teaspoons Norbu sweetener
- 50g coconut oil, melted
- 50g walnuts, chopped

Preheat oven to 180Β°C and spray a removable bottom cake tin with oil.
Arrange plums in tin, packing tightly in a circular pattern, covering the whole base. Sprinkle with 1 tablespoon of Norbu.
Beat 1/4 cup Norbu and eggs together for a few minutes, add milk and vanilla and continue to beat for another minute.
Add flour and salt, blend until combined, pour over plums and bake for 20 minutes.
Combine remaining crumble ingredients in a clean bowl, scatter over cake and bake for another 20-25 minutes, or until an inserted toothpick comes out clean.
Cool in tin for 10 minutes before serving.
