Crumbed & fried croquette that's great with salad, starters or just a snack

Bake potato until soft.
Melt butter in large pan and add finely chopped carrot, swede & onion. Gently fry until softened then add peas and cook further for a couple of minutes. You need to constantly stir the ingredients to cook, but not burn.
Scoop out baked potato and mash into vegetables until well mixed. Add a little plain flour (about 30 grams) to firm up mixture. Add salt to taste.
Allow to cool.
Mould mixture into croquette sized portions ensuring the mixture is firm & smooth. Air pockets can burst when frying!
Flour, egg & crumb.
Fry in deep fat at moderate heat. About 180oC.
Serve warm.
