Herb-Crusted Rack of Lamb with Red Wine Reduction

- 1 kg rack of lamb
- 1 cup breadcrumbs
- 3 cloves garlic
- 2 tbsp fresh rosemary
- 2 tbsp fresh thyme
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp Dijon mustard
- 2 tbsp olive oil
- 1 cup red wine
- 1 cup beef stock
- 500 g potatoes
- 50 g butter
- 100 ml cream
- 2 cloves garlic (for mashed potatoes)

Preheat the oven to 200ยฐC.

In a small bowl, mix together breadcrumbs, minced garlic, chopped rosemary, thyme, salt, and pepper.

Season the rack of lamb with salt and pepper, then sear it in a hot skillet with olive oil for 2-3 minutes on each side until browned.

Remove the lamb from the skillet and brush the top with Dijon mustard.

Press the herb mixture onto the mustard-coated side of the lamb.

Place the lamb on a baking tray and roast in the oven for 20-25 minutes for medium-rare, or until desired doneness is reached.

While the lamb is roasting, prepare the red wine reduction by simmering red wine and beef stock in a saucepan over medium heat until reduced by half.
