In a medium saucepan, combine 500g of mixed berries with 150ml of water over medium heat.

Add 1 tsp ground cardamom and 1 tsp vanilla extract and stir gently.Bring the mixture to a light simmer for about 10 minutes, or until the berries start to break down.

Stir in 200g of a sugar substitute such as stevia or erythritol, and continue to simmer on low heat for an additional 15 minutes, stirring occasionally.

Remove from heat and let the mixture cool slightly before transferring to clean sterilized jars.
