This vibrantly-colored chickpea flour focaccia is a delightful twist on a Mediterranean favorite. Made with real ingredients, it's soft and airy with an airy crumb, ready to be topped with your favorite fresh herbs and sun-dried tomatoes, perfect for an aromatic addition to any meal.

Preheat your oven to 220Β°C (425Β°F).

In a large mixing bowl, combine 500g chickpea flour, 1 tbsp baking powder, and 2 tsp dried oregano.

Gradually add 500ml warm water, stirring until a smooth batter forms.

Fold in 100g diced sun-dried tomatoes and 80g fresh basil leaves mix well.

Grease a baking tray with 1 tbsp of extra-fruity olive oil, ensuring the base and sides are coated.

Pour the focaccia batter into the prepared tray and drizzle a little more olive oil on top.

Bake in the preheated oven for about 25-30 minutes or until the top is golden and slightly crusty.

Allow to cool for a few minutes after baking before slicing.
