Method

    1. Cut the steaks into thin strips, then thread the strips, concertina-style, onto 4 large skewers, placing a chunk of green pepper between each strip.
    2. To make the sauce, place all the ingredients in a small pan and heat gently until simmering, stirring occasonally. Allow the sauce to simmer gently while you cook the meat.
    3. Place the skewers on a grill pan and brush a little sauce over the meat and peppers. Cook under a per-heated grill for 5-8 minutes, basting occasionally with a little more of the sauce.
    4. When cooked, arrange the skewers on a plate and pour the remaining sauce over them.

Chef's Tips

This just needs some plain boiled rice and chilli dipping sauce. Nothing more. If you don't like peppers, leave them out and sprinkle with chopped spring onions for the flavour and texture.
