Ingredients
- 1 tin mixed beans/chick peas in can or soaked overnight if dried
- 1 chilli (of your choice depending on how spicy you'd like them)
- 2 slices wholemeal or granary bread
- 1 table spoon sweetcorn
- 1 table spoon finely diced / grated carrot
- 1 teaspoon tomato ketchup or puree
- 1 clove garlic. crushed
- pinch paprika (I like sweet Hungarian paprika)
- salt and pepper to season
- 1 eggs. beaten
- flour
- 2 spring onions. chopped

I designed this recipe for my son to use at school as it was very easy and yet tastes great.

Place bread in a blender adn blend until you have crumbs, place aside until required.
Drain mixed beans ( you could use kidney beans if you wanted) and place these in blender with tomato ketchup / puree, garlic, paprika, seasoning and chilli. Blend to required texture. Make sure it's not too smooth as it will be difficult to form patties.
When done stir in corn, spring onion, half the bread crumbs and carrots to mixture.
Mix well then form 8 small patties from mixture.
You can grill, fry or bake them now for around 4-5 minutes a side or alternatively flour, egg wash and coat them in bread crumbs before cooking.
If you coat them I find gently frying them in a pan for 4 mins a side is the best method of cooking.
Serve with seeded buns or just with a crisp green salad and relish.
Chef's Tips
Again you can add what you lie to your burgers. If you don't like corn add another veg you do like, the choices are endless.
My son made sweet potato chips with his and the whole class loved them.
