Place a large roasting tray in the oven and preheat it to 190C/gas 5. Wash and drain the potatoes well and cut them in half lengthways.
Place them in a saucepan, cover with boiling water, season well with salt and bring to the boil. As soon as the water boils, take the pan off the heat and drain the potatoes. Spread them out in one layer and let them steam dry and cool down for a few minutes.
In a bowl, toss the parboiled potatoes with the pancetta, sage, a few lugs of olive oil and salt and pepper. Transfer them to the preheated tray and roast for the last 30 minutes that your turkey is in the oven.
Once the turkey is out of the oven and resting, turn the temperature up to 220C/gas 7 and roast for another 10 minutes, or until the potatoes are cooked through and the sage and pancetta are crispy and delicious.
