Ingredients
- 250g (9oz) ready-to-cook chorizo sausage
- 4 tbsp olive oil
- 3 cloves of garlic. peeled and crushed
- 200-250g (7-9oz) raw peeled tiger prawns
- 150ml (5fl oz) dry sherry
- 400g tin of chopped tomatoes
- 2 roasted red peppers (from a jar). sliced into strips
- 2 tsp sherry vinegar
- Pinch of dried chilli flakes
- Small bunch of flat leaf parsley. chopped
- Crusty bread to serve

Cut the chorizo into 1cm (Β½in) thick slices. Heat a frying pan over a medium heat. Add the olive oil and then the chorizo.
Cook for about 5 minutes, until cooked through and the sausage has released lots of rich red oils, before adding the garlic and the prawns.
Cook for a further minute or so until the prawns turn pink, before adding the sherry, chopped tomatoes, red pepper, sherry vinegar, chilli, and season with salt and pepper. increase the heat and cook for 5 minutes.
Stir in the parsley and serve with some crusty bread.
