Ingredients
- 3 Pork escalopes
- 3 portions Basmati rice
- 5 large Onions. sliced
- 2 Chillies. seeded and chopped
- 4 Cloves of Garlic. sliced
- 4 Tbsp Soy Sauce
- 2 tsp Sugar
- Some Salt
- Some Black pepper. ground
- Some Paprika
- Some Cumin. powder
- Some Coriander. powder
- 225ml Vegetable or Chicken stock
- 10 heaped tbsp Flour

Description
A deliciously rich pork dish served with rice in a spicy onion sauce.

Firstly, cook your rice through and leave aside to cool and dry, I use a steamer but you can boil it.
Fill a plastic sandwich bag with your flour and throw in a generous helping of Paprika and Cumin, mix well by shaking the bag.
Place the escalopes into the bag and shake well, making sure that they are all completely covered, remove and put on a plate when they are.
Heat up some vegetable oil in a pan (Needs to be a pan with a cover) and drop each of your floured escalopes in to seal for ~3 minutes on both sides, put them aside when done.
Top up the oil if need be and fry off your sliced onions until translucent, then throw in your chillies and garlic and sautรฉ for a further ~3 minutes.
Mix in a small bowl your Soy Sauce, Sugar, Salt, Black pepper, Paprika, Cumin and Coriander and stir well. Add this to your pan and mix in.
Pour in your stock and bring to a short boil.
At this point, transfer your mixture into a food processor, blitz into a purรฉe and taste (feel free to add more spices or seasoning at this point).
Pour the purรฉe back into the pan and place the escalopes on top. Cover with lid and braise for 50-60 minutes on a medium heat.
When you're ready to serve, take the escalopes out onto each plate and stir your cooked rice into the sauce. Ladel out your now-sauced rice beside your pork and serve immediately.
