Description
This is a great after dinner hit. I have on occasion pulled this off as a planned dessert, as it takes less than 10 mins from start to finish and is always a crowd pleaser.

1) Prepare the lemon zest and juice and set aside. Crush the ginger biscuits until they are a mix of breadcrumbs and larger crunches and set aside also grate some Green & Blacks honeycomb or ginger dark chocolate (enough to sprinkle)
2) Whip the zest and juice of the lemon together with the cream until thick and double in size (soft peaks)
3) Add the icing sugar to taste and swirl in the ginger crumbs
4) Spoon into cocktail glasses and sprinkle some of the grated chocolate and left over lemon rind to decorate.
Chef's Tips
You don't have to use Green & Blacks dark chocolate, you could use any good high cocoa chocolate. I use it as we had a surplus from our wedding favours a few years ago and haven't used anything else since. If you use the best looking or fancy glasses it makes the lemon mess look even more moorish.
